The Languedoc-Roussillon with 300.000 hectares, is the largest wine region of France but also one of the first regions where the vine was planted, under the Roman Empire. It extends over 3 departments: Aude, Gard and Herault and has recently been expanding on the Pyrénées-Orientales and Roussillon. With an annual production of 700 000 hl and nearly 100 million bottles sold worldwide, the appellation desires to become the first AOC of the largest winegrowing in the world.

Several grape varieties are used to produce a wine of great complexity. For reds and rosés, the grapes generally used are Syrah, Mourvèdre, Grenache Noir, Carignan Noir and finally Cinsault. Then for the whites, are privileged white grenache, Bourboulenc, Roussanne, Marsanne, Clairette white, Piquepoul white, Tourbat, Carignan white, Rolle, Terret white, Ugni white Viognier and finally Maccabeu.
