Dom Pérignon is certainly one of the greatest champagne houses. Today, it is one of the best known both for its name and for the incredible quality of the champagnes it produces. The history of Dom Pérignon began in the 17th century with the Benedictine monk Pierre Pérignon, nicknamed Dom Pérignon. Even back then, he was a pioneer in combining different grape varieties. For Dom Pérignon, every year is a challenge to create the best possible cuvée. Using only the best grapes to create a unique interpretation of each season. It is this spirit and the confidence in cellar master Richard Geoffroy that make Dom Pérignon champagnes so unique and expressive. Dom Pérignon currently offers three different types of champagne, a classic champagne with a golden colour and a unique mouthfeel that is reinvented each year. A rosé champagne is also available, a tribute to the pinot noir grape variety, reflecting all the technical skill and humility required to work it.

THE HISTORY
In 1668, Dom Pierre Pérignon assumed the role of monk-procurator at Hautvillers Abbey. During the reign of Louis XIV, he devoted himself to revitalising his community's vineyards. Scrupulously following the precepts of the Rule of Saint Benedict, he made sure that no aspect of the vineyard was neglected.
On his arrival, Dom Pierre Pérignon undertook renovation work while supervising the construction of new buildings. Records show that he was known as "Dom Pierre" or "Dom procureur". In charge of managing monastic affairs and ensuring the prosperity of the vineyards, Dom Pérignon distinguished himself by his ability to create still wines from grapes from "la Montagne" and "la Rivière".
It is said that Dom Pérignon used to taste grapes from different plots and grape varieties in the Champagne region to create blends. Gifted with exceptional sensitivity to taste, he was able to identify the specificity of a terroir and classify wines according to the year of harvest. From vineyard management to the winemaking and blending processes, Dom Pierre Pérignon demonstrated undeniable talent in the art of creating wines.
For more than 28 years, the charismatic Richard Geoffroy has assumed the role of Chef de Caves at the Dom Pérignon Champagne House, truly becoming the soul of the brand. A medical doctor and oenologist, he sees vintages as "pieces of music composed by nature", seeking to interpret them while preserving Dom Pérignon's distinctive style and each vintage's own personality. Between 1990 and 2009, Richard Geoffroy oversaw the declaration of 15 different Dom Pérignon vintages. He is also behind Dom Pérignon's own Plénitudes concept, which aims to offer champagnes at different stages of maturation to track their evolution over time.
Richard Geoffroy has played a major role in the artistic development of Dom Pérignon, encouraging exceptional collaborations, both in the field of gastronomy and with personalities such as Lenny Kravitz, David Lynch, Jeff Koons and Lang Lang.
On 1 January 2019, Dom Pérignon began a new chapter in its history with the formal passing of the torch from Richard Geoffroy to Vincent Chaperon, who joined Dom Pérignon in 2005. After 14 harvests and years of close collaboration with Richard Geoffroy, Vincent Chaperon now assumes the responsibility of embodying both the past and the future, preserving Dom Pérignon's heritage and ensuring the continuity of the House.

Dom Pérignon is a luminous Champagne House that draws its inspiration and inspiration directly from Pierre Pérignon's philosophy, which is to strive for the ultimate perfection of Champagne wine. As guarantor of the brand's prestigious image, the luxury group LVMH, which today heads Dom Pérignon and also owns other illustrious houses such as Krug, Ruinart, Veuve Clicquot and Moët & Chandon, leaves nothing to chance. From then on, the values upheld are rigour and intuition, observation and understanding, knowledge and respect, values embodied by the virtuoso and emblematic Richard Geoffroy.
Each year, Dom Pérignon's Chef de Caves embarks on the adventure of writing the story of a new vintage, starting with a blank page and composing a work based on the year's score and the harvest. The Chef de Caves' challenge is to preserve Dom Pérignon's distinctive style while revealing the singular expression of this specific year. This feat is made possible by Dom Pérignon's exceptional vineyards, a veritable treasure trove in this respect.
With more than 1,200 hectares of vines under the management of Moët & Chandon, Dom Pérignon can exploit 600 hectares exclusively classified as Grands Crus and Premiers Crus. From the terroirs of the Montagne de Reims to the Côte des Blancs, via the Vallée de la Marne, the most prestigious vineyards in Champagne are brought together, giving the Chef de Caves the opportunity to explore the full diversity of this wine-growing region.

THE FOUNDING ACT OF THE DOM PÉRIGNON STYLE LIES IN THE BLENDING OF
Blending occupies a central position in the process of creating a Dom Pérignon vintage. It represents the crucial moment when each element merges to form a whole that bears witness to the diversity of resources, the duality of a fruit that is both fresh and ripe, and the intimate dynamics of its ripening potential.
From the meticulous management of the vines, respecting the unique character of each plot, to the meticulous pruning aimed at directing the sap that nourishes the grapes to come, to the harvesting, extraction of the juice and fermentation of the wine, everything converges on the blend from the very beginning. This delicate work, skilfully combining technique and intuition, is dedicated to preserving the character and vivacity of the grapes.
SLOW MATURATION FOR A UNIQUELY COMPLEX DOM PÉRIGNON
One of the fundamental principles of Dom Pérignon is the complexity of its champagnes, achieved through slow maturation. Time plays an essential role in the development of Dom Pérignon cuvées.
While the freshness of the fruit is preserved, the aromas and textures develop over time, unaltered by oxidation. As a result, the champagnes have exceptional ageing potential, while displaying the distinctive saline minerality of the Dom Pérignon signature.
Like an architect drawing up his plans, the role of the Cellar Master is to visualise the creation of the champagne by anticipating the place that each element will occupy in the future, as well as the evolution of the champagne in 5, 10 or 15 years' time. At Dom Pérignon, a champagne reaches the peak of its complexity more than 30 years after the year of its vintage.
