A quality soil is always the foundation of a good wine. Located 150 km southeast of the capital Sofia, the Bessa Valley terroir rests on rich lands with clay and limestone soils. Ideally situated between hills at an altitude of 230 meters and the Rhodope Mountains, it benefits from a continental climate and the advantages of the Maritsa River, which allows for the production of powerful and structured wines with beautiful acidity and minerality.
The grape harvest is done manually by skilled workers. Only the best berries are picked, followed by a secondary sorting before they are transported for fermentation. The alcoholic fermentations last about 30 days. Then the juice is transferred to vats and subsequently to new barrels. Only French oak barrels are used by Bessa Valley Winery, and they are renewed by a third each time, as after the third use, the barrels no longer influence the aging of the wine.
