Yunnan - Red Wine -This 2019 vintage of AO Yun is according to Robert Parker the best vintage of AO YUN
The colour is dark red almost violet.
The nose gives off aromas of black fruit such as cherry and vanilla following a fine maturation in oak barrels , a very aromatic complex nose.
On the palate, the attack is dominated by fruit, powerful, fine wine, elegant, supple with silky tannins.
Ao Yun is certainly the greatest wine produced in China. Meaning "that flies above the clouds" Ao Yun is inspired by the mountains where it was born, a wine produced on Himalyan terroirs at an altitude of 2600 metres.
The vines are located in a remote mountainous region of north-western Yunnan, on the UNESCO World Heritage site of the Three Parallel Rivers
The estate covers 27 hectares and is made up of 35 terroirs divided into 727 sub-blocks - a wine of goldsmiths!
The first vintage of Ao Yun was produced in 2013 under the direction of Maxence Dulou.
Respecting the virtuous circle of nature, the viticulture is 100% organic, autonomous and regenerative. 100% of the work in the vineyard is done by hand, with no machinery on the estate.
Each farmer grows plants that feed his animals, which feed his plants. What we take, we give back to Mother Nature
The blend is made up of 67% de Cabernet Sauvignon, 17% de Cabernet Franc, 10% de Syrah, et 6% de Petit Verdot.
Only 60% of the grapes harvested are selected for this great wine.
The 12-bottle recommendation : This wine will pair perfectly with red meats such as beef and lamb or poultry. Open 3 hours before tasting.
