La Soufrandière: Aligoté « Aligato » cuvée Zen 2020
Burgundy - Aligote - White Wine -The 2020 vintage is recognized as an exceptional vintage for white Burgundy. Marked by an earliness that lasted from budburst to harvest, 2020 translates into nice harvests. The Aligotés, like most of the white grape varieties of Burgundy, are at the same time fruity, express a beautiful complexity and assert themselves by beautiful acidities.
"Aligato" 2020 is the Aligoté cuvée of Domaine de la Soufrandière, from vines taken over in 2016 by the estate and converted to organic and biodynamic farming. The parcel is exposed to the East on the foot of the Roche de Vergisson. A true pioneer in organic and biodynamic farming, Domaine de La Soufrandière strives to reveal the purest character of the wine with the least amount of inputs possible, "Aligato" is therefore presented as a "Zen cuvée". This means that it is vinified without sulfur until the moment of bottling, during which there is a total addition of up to 20 mg/l of sulfites. This is the operation that aims to stabilize the wine; where normally for whites, the Demeter specifications allow 90 mg/l of sulfites in total and that of Organic, 150 mg/l and for other non-certified wines up to 210 mg/l.
Tasting comments:
The robe: deep yellow, golden reflections.
The nose: aromatic around the citrus fruit, lemony, acidulous apple, some buttered notes
The mouth: beautiful balance fat/acidity, saline, long, complex, saline final

A wine to enjoy with a nice goat cheese, white meat or even a dish in sauce. This Aligoté is ready to drink, to be served at 12°C.
