The nose is expressive and powerful, with a concentration of red and black fruits, followed by an elegant woodiness.
The palate is generous, fleshy and greedy. The attack is straightforward, and the mid-palate texture is enveloping, revealing a precise, silky tannic structure.
The blend for the 2021 vintage is 71% Merlot and 29% Cabernet Franc.
The 2021 vintage was matured for 18 months in new French oak barrels, 50% of which were new.
1er Grand Cru Classé B de Saint Émilion, Château Canon, owned by the Wertheimer family (Chanel) since 1996, is situated in exceptional soil. With a surface area of 34 hectares in a single block at the gateway to the village of Saint-Émilion, which is a UNESCO World Heritage Site.
Like its neighbour Château Clos Fourtet, Château Canon's cellars are located under the vineyards in soutéraines cellars.
The Wertheimer family also owns Château Rauzan-Ségla in Margaux and Domaine de l'Ile in Porquerolles.
