Secret de Schistes Rouge 2020 - Chateau de l’Ou
Languedoc - Côtes Catalanes - Red Wine - is an organic 100% Syrah cuvée aged entirely in barrels for over a year.
It is a powerful, complex and warm red wine, evolving on notes of the South such as thyme and rosemary. The wine is dominated by jammy black fruit (cherry, blackcurrant, blackberry) and an elegant woodiness that brings out aromas of chocolate and vanilla.
A slight touch of minerality is also present.
The vines are surrounded by garrigue and planted on the mosaic schists of the Haute Vallée de l'Agly, at an altitude of 325 metres, and benefit from cool nights to ripen peacefully.

Château de l'Ou offers rich wines with a well-defined tannic concentration and a complex nose with aromas of ripe red fruit.
The grapes are destemmed and placed directly into 300-litre barrels (only one of the two bottoms is closed).
Maceration lasts 3 to 4 weeks, with manual punching of the cap, then each barrel is emptied and pressed, with the cooper coming to the estate to close the barrels. The wine finishes fermentation in the same barrels. The wine is matured for 12 to 14 months.
The advice of 12 bottles: serve at room temperature, it is a great wine from the South to be consumed preferably with grilled red meats or game. A wine with a potential for aging for 10 years
