Domaine Bernard Defaix : Chablis Grand Cru Vaudesir 2022
Burgundy - Chablis - Grand Cru - White Wine -The Chablis Grand Cru Vaudesir 2022 from domaine Bernard Defaix is one of the greatest dry white wines of the domaine and of the Chablis appellation.
It is composed of Chardonnay (100%) from vines grown in Organic Agriculture.
Located between Valmur and Preuses, next to Grenouilles, Grand Cru Vaudésir covers almost 15 ha. Its terrain is steeper, less chalky and a little lighter than that of the other Grand Crus. Vinification and ageing are carried out in the same way as for Bougros.
Round, fat and seductive, Vaudésir is always of great finesse.
Tasting notes:
The coat: Green, shiny coat.
The nose: Fruity aromas with lovely spicy ripeness. Fine, precise floral notes.
The palate: rich flavors, with good midpalate volume, are almost salty on the stony finish. Gourmet with fatness, spicy and tangy flavors, carried by minerality. Lots of freshness and drive in this grand cru.
The 12-bottle suggestion: Full-bodied with good length. Serve at 13°C with, for example, roast langoustines.
