Domaine de Villaine : Bourgogne Côte Chalonnaise "Les Clous Aimé" 2020
Burgundy - Bouzeron - White Wine -This 2019 Bourgogne Côte Chalonnaise "Les Clous Aimés" is a great white Burgundy wine, produced by Domaine de Villaine and made from seven different parcels of Chardonnay located in the Bouzeron appellation area. Les Clous Aimé is above all a wine for keeping. Made from old vines and predominantly limestone terroir, it has a very pure and mineral character in its youth, but to fully appreciate it, you have to know how to wait and it is only after 5 to 7 years that it reveals the finesse and complexity of its aromas.
Tasting notes :
The robe: A crystalline golden colour.
The nose: delicate, mineral, notes of white flowers, stone fruits such as peach
The palate: follows the nose and expresses a great purity, a beautiful intensity and a concentration that enhances a saline and persistent final.
Located between the villages of Santenay in the Côte d'Or and Rully and Mercurey in the Côte Chalonnaise, the Domaine de Villaine is located in Bouzeron. The first village of the Côte Chalonnaise south of Beaune, it is certified organic since 1986. The vines are cultivated on hillsides between 270 and 350 meters altitude. The thin soils with a high limestone content, of these hillsides, ensure good control of the yields and the warm microclimate favours the ripening of the grapes.
The advice of 12bouteilles: To be served around 12°C - 14°C, this white wine will perfectly accompany fish, white meats (avoiding too spicy sauces) and some cheeses such as goat cheese, reblochon, Beaufort, comté.
