Loire - Sancerre - White Wine -The vintage "Le Paradis" is produced by the famous Domaine Mathias Planchon located in La Loire in Sancerre. Le Paradis is a 14 hectare vineyard composed of Oxfordian limestone and clay in Sancerre, of which 0.9 hectare facing south belongs to Planchon.
Tasting notes:
The color: intense straw yellow color
The nose: the nose offers a fragrant and floral wine whose intensity is gradually revealed. It offers aromas of orange blossom, jasmine, broom, as well as notes of white and black currants and elderberry. A subtle touch of gooseberries gives way to notes of lemon, lemon balm and minerality.
The palate: On the palate, this Sancerre is both lively and silky in its acidity, with a creamy texture. Limestone minerality forms the base, austere and white, while notes of flowers, blackcurrant, elderberry and greengage intertwine. Obvious grapefruit and spice notes evoking tobacco and earth enrich the whole. It is a long, intense and elegant wine.
The 12bouteilles advice: To be enjoyed at a serving temperature of 10°C, this wine will pair perfectly with wild salmon marinated in lime, dill and juniper, crab bisque with oysters, as well as mussels. bouchot with olive oil and pepper.
This sublime vintage is made exclusively from Sauvignon Blanc (100%).
The wine is aged on fine lees in the same containers, for a variable period depending on the vintage, generally between ten and twelve months on average. Bottling then takes place according to the lunar cycle.
