The Nose: delicate and refined, revealing aromas of fresh fruits and spices, accented by subtle hints of honey and a mineral touch reminiscent of flint at maturity.
The Palate: lively and balanced, offering a harmonious structure that is ideally revealed between 2025 and 2031, to be enjoyed at 12°C.
Produced from 100% Chardonnay, this 2023 vintage benefits from meticulous winemaking: hand-harvested grapes, fermentation in stainless steel tanks at controlled temperature with regular pump-overs, followed by aging for 12 to 15 months in oak barrels (including some new ones) to develop its complexity and finesse.
Combining tradition and modernity, the Pernand-Vergelesses "Les Combottes" embodies Burgundian excellence, reflecting the expertise passed down within the Rapet Père & Fils house. This fruity and floral white pairs wonderfully with delicate dishes such as soft, melting goat cheese in pastry, langoustines, or refined dishes like poultry terrine and veal blanquette accompanied by a tomme.
