This 2021 vintage of La Sauvageonne Grand Vin comes from a blend of Grenache, Syrah, and Mourvèdre. Low-yield, hand harvesting guarantees perfectly ripe, healthy grapes, carefully sorted. Each variety undergoes separate maceration for 20 to 25 days before aging for 12 to 16 months in new 225-liter barrels. The “ruffes” (reddish volcanic soils) and schist of La Sauvageonne’s two terroirs ensure ideal water balance, allowing for steady, gradual vine development—key to achieving remarkable finesse in the glass.
Elegantly crafted, the La Sauvageonne Grand Vin cuvée reflects the unique climate of Terrasses du Larzac, where significant temperature variations favor the gradual ripening of the grapes, enhancing their color and aromatic complexity.
