Pascal Jolivet : Sancerre white "Sauvage" 2022
Loire - Sancerre - White Wine -This cuvée "Sauvage" is made from a selection of 2 hectares of limestone plots located in the villages of Champtin and Bué-en-Sancerre.
On tasting, "Sauvage" in this 20222 vintage releases great freshness, liveliness, minerality, complexity and salinity on the finish.
The nose is intense, and on the palate the wine is full and opulent, almost reminiscent of the DNA of the best white Bordeaux wines. This is a perfect cuvée for which only 10 to 15,000 bottles are produced per vintage.
This wine is made from old vines, grown organically, which produce exceptional Sauvignon Blanc grapes and a concentrated juice of great purity.
Created in 1987, Domaine Pascal Jolivet is a vineyard located in the Loire Valley, between the appellation Sancerre and Pouilly Fumé.
The advice of 12bouteilles: To taste right now, carafe it at least an hour before serving it to let develop its animal aromas. Serve it cool, around 11-12 ° C. It will go perfectly with a fish with cream.
